About River Rat Cheese

Founded in 1981, 1000 Islands "River Rat Cheese" cheese is the flagship brand of Gold Cup Farms, Inc. As a 4th generation family business, we do not make our own cheese (anymore), rather we carefully select and age our NY Cheddars to perfection in a controlled environment. This "aging" results in a sharp and tangy finish to our sharp cheddars.

Gold Cup Farms distributes its products to retail stores throughout NY, via internet & mail order as well as selling the cheese in our two Cheese Stores. We also distribute our Fresh "squeaky" cheese curd every week throughout Northern, Central and Western New York.

Cheddar cheese making has been a tradition in northernmost New York State for well over a century and our "River Rat Cheese" cheese proudly carries on this tradition.

History

Starting with a small cheese factory on the family farm in 1895, Henry Brown first learned the art of cheese making at the tender age of fifteen. Throughout his life he developed additional cheese factories in Jefferson and Oneida Counties. His mission was to provide the finest cheese available for his customers and he took great pride in performing his mission well.

His son Richard Brown, Granddaughter Cindy Major and Great Grandson Jon Major are now carrying on the family tradition. In addition to the well known "River Rat" Cheddar, Gold Cup Farms also provides a number of north country treats which it has made available for its customers throughout the United States. Among these delectable treats are fresh cheese curd, Adirondack Sausage, Croghan Bologna, pure NYS Maple Syrup and a hot mustard that really has a kick.

Weekly, Gold Cup Farms is supplying much of New York State with its famous "River Rat squeaky" Fresh Cheese Curds, Aged " River Rat" Cheddars, "River Rat" Horseradish and Flavored Cheddars, Specialty Cheese Spreads, Adirondack Sausages, Croghan Bologna, and Maple Syrups. Visitors from all over have visited Gold Cup Farms to taste the famous "River Rat" cheeses.
